Sweet Spiced Delicata Squash

Maple, fragrant spices and lemon transform simple squash into an irresistible side dish. Delicata squash is especially easy to work with and doesn’t need to be peeled. But you can also use this same recipe with any squash, like butternut, acorn, or even pumpkin. If you don’t have pistacchios on hand to garnish, try almonds or pecans.

Serves 6 Prep time: 15 minutes Cooking time: 40 minutes

Ingredients

3 pounds delicata squash (2 to 3 squash, depending on size), rinsed
3 tablespoons extra virgin olive oil
2 tablespoons maple syrup
1 teaspoon salt
1 teaspoon Sweet Spice Blend (see recipe)
1/4 teaspoon ground nutmeg
1 1/2 teaspoons lemon juice
3 tablespoons roughly chopped pistachios

Procedure

1.     Preheat oven to 350 degrees. 

2.     Cut squash lengthwise, remove and discard seeds. Cut into half-inch thick half moons. 

3.     Place squash on a baking sheet and drizzle with olive oil and maple syrup. Toss with salt, spice blend, and nutmeg. Make sure the squash is evenly coated with all ingredients.

4.     Bake for about 35 minutes, until squash is soft inside and lightly browned and caramelized on the outside. 

5.     Serve sprinkled with lemon juice and pistachio nuts.  

To make into baby food: If making this for babies, peel the squash before baking. Once cooked, serve as finger food, or it is easily mashed with breastmilk or formula.
