Overnight Oats, My Way

Ahhhh….my all-time favorite breakfast. For a combination of ease, health, and taste, it’s hard to beat overnight oats. The oats and chia provide prebiotic fiber that encourages a healthy gut microbiome. Tart dried cherries are super high in antioxidants. Walnuts and hemp seeds lend protein and wonderful omega 3 fats. And dates provide a touch of sweetness. Of course, this is just one version. If you don’t like (or don’t have) these ingredients, try others like raisins, almonds, sunflower seeds, hazelnuts, or whatever dried fruit and seed combo you have around.

Yields 5 cups

Prep Time: 10 minutes plus passive overnight

Ingredients

2 cups rolled oats

¼ cup chia seeds

¼ cup hemp seeds

2 teaspoons ground flax seed

¼ cup tart dried cherries (or sub with raisins or goji berries)

¼ cup of chopped dates 

¼ cup roughly chopped walnuts

3¼ cups water (or a combination of water and oat milk is delicious)

Procedure

  1. In a large glass tupperware with a tight-fitting lid, combine all ingredients except water and mix well. 

  2. Add water and stir again. Cover, and let sit in the refrigerator overnight. 

  3. Enjoy with yogurt and fresh fruit or other toppings such as nut butters, jam, or compotes.
